Bib Gourmand Defined and GB&I Complete Listing 2009


In the unique “language” of the Michelin Guide, the Bib symbols indicate the inspectors’ favourite establishments, offering high-quality products and services and good value for the money.

For even though the Michelin Guide is known and recognised for its “star” system, these
restaurants represent only 5% of the selection, the rest of which is comprised of good, small,
affordable priced establishments.

Among these establishments are the “Bibs,” with the Bib Gourmand symbol for restaurants and
the Bib Hotel symbol.

Bib is short for Bibendum, the character created in 1898 from the imagination of the Michelin
brothers, André and Edouard, and the pen of cartoonist O’Galop. Over the years, Bib—the one and only Michelin Man—has become the Group’s “mascot.” In the Michelin Guide, Bibendum’s head is a familiar, widely recognised red symbol.

The Bib Gourmand symbol was created in 1997. It indicates a restaurant offering good food at
moderate prices. For the 2009 Guide, the price of a full meal (excluding drinks) is under £28 (40
€ in the Republic of Ireland). Descriptions of Bib Gourmand restaurants include the
abbreviation Rest.

Organic Home Delivery: Riverford

I like tuesdays. It's the day I can find at my door a nice box with nice, fresh, tasty and organic vegetables and fruits.
Once I've been more adventurous and ordered some meat. A BBQ box. It was as tasty as the meat one of my friend used to bring me from Germany. Only the sausages were disapointed: too dry.
So if you love food, have an internet connection, live in the UK and can't face shopping, go online!

1st BBQ of the year


The weather has been really nice for the last two weeks and I was looking forward to the bank holiday weekend.
On Friday, I picked up one of the greatest inventions of the century ; a disposable barbecue.
On Saturday, I went to my local butcher and picked up some nice meat: burger, sausages, ribs and kebab.
On Monday, the plan was to go to the beach and have a feast. Unfortunately, the wind and rain came out and the plan had to be changed.
So I ended up lighting my bbq in the garden ...

Monkfish

I never know how to choose fish, but sometimes Ihave a go (and so far I've never been poisoned!).
I had a go last time at Sainsbury's and I went for a Monkfish. It must be a good fish as it's quite expensive ...
I can't remember if I've ever cooked - or tasted this fish before - so I chose a random recipe from the Internet.
As it wasn't planned, I didn't have the all ingredients.
For the fish, I replaced the curry powder with garam masala powder, I didn't use bay leaves, thyme, tarragon or saffron strands.
The sauce was quick to make as I was running out of white wine, and I didn't have any mussels.
I had some fresh organic cabbage left from my Riverford order (please remind me to write a post on them) which went really well with the fish.
The result was absolutely yummy!

Tartiflette



If you're a quiz night fan, you might want to know that Tartiflette is a French dish from the Savoie region originated in the valley of Aravis, home of Reblochon cheese. Surprisingly, it's not a traditional dish, and was, in fact, invented and launched only in the 1980s by the Reblochon trade union in an attempt to increase sales of the cheese.

Now, as for the recipe, it's pretty simple:

  • cut some potatoes in squares and cook them with some onions
  • once cooked, put the potatoes in a dish, add some cream (optional), bacon (optional as well - and cooked) and cover with Reblochon (cut in two or three slices depending on its thickness).
  • bake in the oven until the Reblochon is melted and crispy.

Brunch: Poached egg, Smoked Salmon, Brioche and Hollandaise sauce

Hollandaise sauce:
I still don't get how to do this sauce. So if you never tried doing one, I would recommend you buy a 'ready made' one.

Brioche Bread:
I have a Kenwood bread machine which makes dead good bread (and brioche). All you need to do is put all the ingredients in the following order and wait few hours.

Milk: 130ml
Eggs: 1
Butter, melted: 80g
Unbleached white bread flour: 350g
Salt: 1tsp
Sugar: 30g
Easy blend dried yeast: 1 and 1/2tsp
